Baitium High Grade Stainless Steel Professional Fillet Knife - XTRA Grip

I really like this large fillet knife. It's not quite as flexible as some other fillet knives I've used, but it's great for trimming briskets which is what I'm using it to do. It came pretty sharp out of the box. The handle is very comfortable and ergonomic. It has a tacky rubberized feel to it making for a sure grip. Overall it's a great knife for my purpose

I have to admit, I have yet to clean fish with these, but I have cut beef and pork. They are very sharp and do come with a hone to keep them that way. What I really like is the grip. They fit very well in my hand, a bit soft so you can really grip them and have no worries of putting a lot of pressure on them when you are cutting fish with slimy hands. I cant wait to get a fish haul and try these out, but I have high confidence that these will perform excellently.

This is a nice selection of fillet knives. Whether you actually use them for filleting fish, or just as a flexible boning knife for other game, you have 4 different length options. At first When I felt the edge on these knives, they did not feel "razor-sharp". After a few strokes on the included sharpening steel, the edge came back nicely and I could cut paper with them. Each knife has a plastic protective tip to keep from cutting through the roll-up organizer which is nice. As for the han…dles, they appear sort of bulky but offer an excellent grip with the "squishy" rubber material, excellent when your hands are wet.

I picked this up to have a fillet knife in our camper. You never know when one of the kids will haul dinner in on a fishing line. This knife has great flexibility- which is essential for a fillet knife. The blade steel is not listed, nor does it appear on the blade- generally a bad sign. However, this is a fillet knife and not subject to all the stresses an EDC or other knife might have to endure- it is specialized. I think this knife will work well for the intended purpose. Also, I like …how very grippy the handle is. The sheath is ok, but again, who walks around with a fillet knife on their waist? For living in a drawer until needed, it will work fine.

Overall, this seems like a quality knife on first impression. The blade was sharp and had a good flexibility that you would expect out of a fillet knife. I am uncertain on the durability of the blade, but it held an edge well for the bit that I used it. The handle is a bit thick, but the rugger is pretty grippy and should help reduce slipping when wet. It did seem to stain the white pretty easily though, so it will show use pretty quickly after being in the filed. The sheath seems more than ade…quate for the price.
